Ingredients
DIRECTIONS:
Preheat the oven to 375-380°F.
Start prepping your strawberries by slicing them. You should get about 3 slices per strawberry. Slice them smaller if the strawberries are on the smaller side; ¾ cup to 1 cup of strawberries is perfect.
Next, you want to mix your dry ingredients. Add flour, baking powder, and salt in a large bowl. Whisk it until incorporated and set aside.
In a separate bowl, mix your wet ingredients. Start with blending the sugar with the oil. Then, add in your eggs one at a time. Pour in the lemon juice, followed by the lemon zest (feel free to add more zest if you're lemon-obsessed). Lastly, add your yogurt. You don't want to skip this part. Yogurt gives cake such a moment. Drizzle a little vanilla extract to top the yogurt off.
Next, add in the dry ingredients you’ve set aside. It may look a little lumpy for a bit, but that's normal. I made mine in a 9” springform round pan; you can make it in any one you decide. The baking time will change, but just keep an eye out for the center and the edges of your cake. If you're using a pan smaller than 9”, don't use all of the cake batter.
Line the bottom of your pan with parchment and pour half of the batter.
Start layering your ingredients in the pan by adding the sliced strawberries and reserving some for the top. You don't have to layer them perfectly (I just scattered mine).
Add the rest of the batter on top and gently smooth it out. Try not to disturb any of the strawberries rooted in the batter.
Add the rest of the strawberries on top of the cake. Leave uncovered.
Bake for 50-55 minutes or until a toothpick inserted in the middle of the cake is removed free of crumbs. Again, baking times will vary if you're baking in a pan other than the 9” springform. I have only made this cake in the springform pan!
Let the cake rest for at least 15 minutes. Or if you're anything like me, eat it right away! Sooo delicious.
Once the cake has cooled a little, pour the yummy icing all over.
Lastly, garnish your cake with the necessary trimmings. I garnished my cake with some Confectioners sugar, lemon slices, strawberries, and half a passion fruit. It's visually stunning for yourself or for company! The cake lasts 3-4 days or less, depending on how much you love it!
